Native to North America, this fish has provoked a great deal of interest this side of the pond where they are only farmed on a small scale (Trafalgar being One of only Two fisheries to do so)

Its origins are to be found in the rarefied altitudes high in The Rocky Mountains of the United States where its distinctive and glorious sandy golden colour have contributed towards a nickname of "Fish from heaven" from the natives.

At Trafalgar Golden Trout eggs are produced by the farm's own hatchery and, like all our fish, they are grown in extensive gravel ponds, with careful protection necessary to protect them from herons who are attracted to their highly conspicuous colour.

Our conditions are perfectly conducive to producing such a fine eating fish, with many finding it to be of more visual appeal than its more famous Rainbow cousin. The flesh is a beautiful rich Red colour and the overall texture is firmer than our other breeds.

 

This classic fish was originally to be found in the lakes and streams that drained from the Pacific slope, right the way from Alaska to northern Mexico (In addition to the Pacific coastal stream of Asia) The species has now developed into a truly worldwide fish including wide ranging habitation in Great Britain.

A truly spirited fish, the Rainbow Trout revels in swift flowing, well oxygenated rivers with clean rocky bottoms and enjoys water temperatures that remain below 70 degrees Fahrenheit. However it will tolerate temperatures of 80 degrees quite readily and it is indeed this tolerance for water deemed too warm by other breeds of trout that make it such a great fish to stock.

The name 'Rainbow' is derived from the prominent band of Pink or Lavender that runs from cheek to tail that create an iconic image along with the Dark Green back and Black spots of a breed that has sustained lasting appeal with fish eaters and good restaurants alike throughout the world.

 

 

 

A breed highly prized among the angling community due to their cunning nature, fighting spirit and great natural beauty, the Brown Trout has been an inhabitant of the British Isles for many centuries.

Due to their inherently wild and slow growing nature, they are only farmed in small numbers for the purposes of fishing, but at Trafalgar, they are reared for the table. Although they are something of a culinary rarity, their flavour is excellent- even drawing admiration from Charles I who passed favourable comment after sampling the fish whilst staying in Salisbury.

Organic

These fish were the most natural of choices for Trafalgar when it first contemplated applying organic farming principles to the breeding of trout. By its very nature, organic farming requires that fish are grown at low densities and fed on a produce garnered from a sustainable resource. Consequently, no colourants, additives or genetically modified ingredients of any kind may be included in the diet.

By conforming to these strict rules, we are able to produce an environment ideally suited to the habits that the Brown Trout so thrives on.
